Chef's Recipe Series

Burnt Orange Citronette

  • 3 oranges
  • ½ ea. Jalapeño (de-seeded)
  • ½ oz. Ginger
  • ½ cup sugar
  • ½ cup rice vinegar
  • 3 cup Orange juice
  • ½ cup tomato juice
  • ½ cup pineapple juice
  • ¼ cup lemon juice
  • 1 qt. Oil (veg. or canola w/ a little olive)
  • salt & pepper

Zest, peel, & rough chop oranges. Place in pot w/ jalapeno, ginger, sugar and half of the rice vinegar reduce until caramelized, (very dark !!!!). Place in blender w/ O.J., tomato, lemon, & pineapple juices and rest of vinegar. Mix and slowly add oil. Season & strain (make sure your blender is large enough).
